Roast Pumpkin and Brinza Feta with Herbs

Roast Pumpkin and Brinza Feta with Herbs 

This delicious and healthy dish is perfect for any occasion, from weeknight dinners to special occasions with friends and family.

 

Servings: 4 

Prep Time: 10 minutes 

Cook Time: 30 minutes 

 

 Ingredients: 

- 2kg pumpkin, peeled and cut into 2cm cubes 

- 2 tablespoons olive oil 

- 1 teaspoon ground cumin 

- 1 teaspoon ground coriander 

- 1 teaspoon honey 

- 250g Brinza feta cheese, cubed 

- 2 tablespoons of fresh herbs, such as parsley, thyme and sage, chopped 

- Salt and pepper 

 

Instructions: 

1. Preheat your oven to 200°C (400°F). 

2. Place the pumpkin cubes in a large bowl and drizzle with olive oil. Add the cumin, coriander, honey, salt and pepper, and mix until evenly coated. 

3. Spread the pumpkin cubes onto a baking tray lined with baking paper. Roast in the preheated oven for 25-30 minutes, or until golden and tender. 

4. Remove the tray from the oven and sprinkle the feta cheese and herbs over the pumpkin. Return to the oven for an additional 5 minutes, or until the cheese has melted.
