 Ingredients:Â
- 2kg pumpkin, peeled and cut into 2cm cubesÂ
- 2 tablespoons olive oilÂ
- 1 teaspoon ground cuminÂ
- 1 teaspoon ground corianderÂ
- 1 teaspoon honeyÂ
- 250g Brinza feta cheese, cubedÂ
- 2 tablespoons of fresh herbs, such as parsley, thyme and sage, choppedÂ
- Salt and pepperÂ

Instructions:Â
1. Preheat your oven to 200°C (400°F).Â
2. Place the pumpkin cubes in a large bowl and drizzle with olive oil. Add the cumin, coriander, honey, salt and pepper, and mix until evenly coated.Â
3. Spread the pumpkin cubes onto a baking tray lined with baking paper. Roast in the preheated oven for 25-30 minutes, or until golden and tender.Â
4. Remove the tray from the oven and sprinkle the feta cheese and herbs over the pumpkin. Return to the oven for an additional 5 minutes, or until the cheese has melted.
