Not only are figs a delightful and healthy snack, but they are also a great ingredient to add to salads, sandwiches, pizzas, and more. One of the best ways to enjoy figs is by grilling them. Grilling figs brings out their natural sweetness and adds a nice smoky flavour.
This recipe will show you how to make a delicious grilled fig, prosciutto, feta, and pistachio salad that is perfect for a summer barbecue or a light lunch.

Ingredients:
6 ripe figs, halved
4 slices of prosciutto
1/2 cup crumbled feta cheese
1/4 cup shelled pistachios, roughly chopped
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp honey Salt and pepper, to taste
A handful of mixed greens
Fresh mint leaves, for garnish

Instructions:
Preheat your grill to medium-high heat.Brush the cut side of the figs with 1 tbsp of olive oil and season with salt and pepper. Grill the figs cut side down for about 3-4 minutes until slightly charred. Remove the figs from the grill and let them cool slightly. Grill the prosciutto for about 1-2 minutes per side until crispy.
Whisk together the remaining olive oil, balsamic vinegar, and honey in a small bowl. Season with salt and pepper to taste.
On a plate, arrange a bed of mixed greens. Place the figs on top of the greens. Crumble the feta cheese over the figs. Tear the prosciutto into pieces and scatter it over the salad.
Sprinkle the chopped pistachios over the salad. Drizzle the dressing over the salad and garnish with fresh mint leaves.
Serve and enjoy your delicious salad.
