A modern, semi hard, Dutch cheese made in a Swiss style from cow’s milk, similar to an Emmental and or a Gruyere cheese.
The Maasdam has characteristic large holes, created during the ripening process. With a nutty flavour that as you chew gives way to a sweet finish, Maasdam has great melting properties and compliments sweet fruit flavours beautifully, particularly banana. The Nevis Maasdam matches well with an oaked Chardonnay or Pinot Gris.
